
Chef Tatum Hontiveros was in the house to create the images for her new menu for Kusina Restaurant. Tatum is in my master’s degree program at the Culinary Institute of America. The focus of our program is branding and sustainability for food businesses. I love the cohort that is sharing the journey and it is a super pleasure to work with Tatum. Tatum is so dedicated to organic eating and sharing her Filipino culture with food. It was amazing to watch each dish unfold and to help her style and capture just the right angle and feeling for each dish. We opted for island, authentic, organic, and flavor in our work. She has launched Kusina in the Modesto area of California because she got tired of driving far to get a decent restaurant meal of her homeland.
