Additive 13 / 75 – Calcium sulfate

In spite of its chemical name, and the fact that its sister material, plaster of paris, is used to make casts and walls, calcium sulfate shares the distinction (along with eggs, salt, and water) of being the least processed of popular food ingredients: We do hardly anything to it before eating it. Like salt, it comes from an ancient marine deposit near the Earth’s surface and it is essential to our health.
